Chicken Feta Rigatoni

Rigatoni with chicken, tomatoes, mushrooms, herbs and feta for a weeknight bowl that still looks composed.

Method

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Build the sauce in a wide pan over medium heat, adding pasta water until glossy.
  3. Toss the pasta in the sauce for 1–2 minutes so it clings properly.
  4. Finish with cheese, herbs, pepper or oil and serve hot.

Serve with lemon zest, parsley and a medium-bodied red or chilled rosé.
