Spinach Meatballs with Mafalda & Green Beans

Tender spinach meatballs with gravy, ruffled mafalda pasta, green beans and a snow of parmesan.

Method

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.
  2. Build the sauce in a wide pan over medium heat, adding pasta water until glossy.
  3. Toss the pasta in the sauce for 1–2 minutes so it clings properly.
  4. Finish with cheese, herbs, pepper or oil and serve hot.
