Shrimp Cocktail with Lemon & Chives

Cold shrimp, tomato base, lemon and chives — bright, glossy, fast and very aperitif-friendly.

Method

  1. Poach shrimp in salted simmering water for 2–3 minutes, then chill immediately.
  2. Prepare the tomato cocktail base with lemon, herbs and a little heat.
  3. Arrange shrimp over the sauce while cold.
  4. Finish with chives, lemon and olive oil.
